gluten-free chocolate truffles

Hello wonderful rouge and whimsy readers!

My name is Meghan, and I write over at eat.live.make  all about living a creative, simple and healthy life. You can follow along for more awesome recipes and tutorials on facebook//pinterest//instagram and my blog! Sweet Erika is kind enough to let me pop in today and share this delicious recipe with you all.

My mom made these truffles for me for Christmas and I MAY have eaten them all without anyone's help! They have chickpeas in them, so they are healthy, right? Not to mention that they are totally gluten free AND vegan! For those of you who aren't vegan, feel free to substitute the chocolate for any melting chocolate you would normally use. Bring a batch of these to your next party and you'll be everyone's new best friend.. I know you'd be mine:).

Ingredients:
  • One 15 oz. can chickpeas, rinsed and drained
  • ¼ c cocoa powder
  • ¼ c honey, or to taste (substitute agave or maple syrup for strict vegan)
  • ½ c peanut butter (I used natural)
  • 1 t gluten free vanilla
  • About 16 oz. gluten free & vegan (I used enjoy life brand) chocolate chips for dipping
  • Options sprinkles or other decorations, if desired

Directions:
  1. Combine the chickpeas, cocoa powder, honey, peanut butter, and vanilla in your food processor.
  2. Process until a dough consistency forms, stopping to scrape down the sides, as needed.
  3. Transfer cookie dough to a bowl or storage container. At this point, you can refrigerate the dough for a bit before making the truffles.
  4. Take about 1 tablespoon of dough and roll into a ball. Repeat with the remaining dough and peanut butter cups.
  5. Refrigerate the undipped truffles for at least 30 minutes or so.
  6. If using, melt the chocolate as per package instructions, dip each truffle, and place on wax paper to cool, adding sprinkles or other decorations before chocolate is set.
  7. Once chocolate is set, store truffles in the refrigerator.

( this recipe has been adapted from the original recipe found on Cupcakes and Kale Chips)

ok how delicious do those look? Meghan is just about the sweetest and a talented photographer-- I highly suggest checking out her online space.

guest post: oatmeal raisin cookies + video

It's Thursday and I think you all probably could use two things:
1) cookies
2) a good giggle

And I am thrilled to offer you both.

Kacie from A Collection of Passions runs an adorable blog chock full of great recipes-- I love this post on meal planning-- and she has a pretty stinkin' cute two-year-old. She and her daughter did a baking video and I highly reccommend you watch it-- especially the outtakes at the end.

You can see and download a printable version of the recipe here!

Go say hi to Kacie (and Gigi) at A Collection of Passions blog, Facebook or Twitter!

guest post: oatmeal chocolate chip cookies

Hi rouge & whimsy readers!  I'm Gina from {Acute Designs} and I am so happy to be here today while Erika is frolicking around Europe.  I mean, how jealous are you??  I, for one, am super jealous.

Today I am going to share with you guys one of my all-time favorite treats - Oatmeal Chocolate Chip Cookies.

When I was a kid, my grandma would visit us and bake and bake and bake and bake.  One of her specialties was oatmeal chocolate chip cookies.  She would make about a million batches and freeze them so we would have cookies for months after her visit had ended.  Once we went to my uncle's house after she had passed away and he still had cookies in the freezer....true story and yeah, a little creepy.  But whatever, they were still amazing!

It was my dad's birthday last week and he loves oatmeal chocolate chip just as much as I do, so I whipped up a batch of these cookies and sent them off to him.  Well, I sent him about two-thirds of the batch, I ate the rest in less than a day.  I have no self control when it comes to sweets.  I should probably stop baking so much.

Oatmeal Chocolate Chip Cookies {adapted from The Cook's Illustrated Cookbook}
-1 1/2 cups all purpose flour
-1/2 teaspoon baking powder
-1/4 teaspoon salt
-1/4 teaspoon nutmeg
-16 tablespoons {two sticks} butter, softened
-1 cup packed light brown sugar
-3/4 cup white sugar
-2 eggs
-3 cups old fashioned oats
-1 cup dark chocolate chips {or whatever ind you prefer...dark chocolate are my favorite}

1. Pre-heat the oven to 350 degrees and line two cookie sheets with parchment paper.
2. In a bowl, whisk together the flour, baking powder, nutmeg, and salt.  Set aside.
3. Using an electric mixer, cream together the softened butter and sugars for about 3 minutes.  Add in the eggs, one at a time, and mix until incorporated - less than a minute.  Finally, with the mixer on low, add in the dry ingredients, then the oats, until just combined.  Fold in the chocolate chips.
4. Using your hands, roll the dough {about a tablespoon at a time} into balls and line on the cookie sheets.  Bake for 8 minutes, then rotate the pans and bake for another 8 minutes.  Take these out of the oven once the edges start to slightly brown.  These cookies are thick, so if they are over-baked they will get hard.  Let the baked cookies cool on the cookie sheets for about two minutes, then transfer to a plate to cool.

This recipe will make about 45-50 cookies.....enjoy!

Gina

recipe: gourmet grilled cheese

Hey there! My name is Julie and I blog over at Julie Ann Art. Since Erika is frolicking around Europe (lucky!!) I thought I would help you celebrate National Grilled Cheese month (April 12 is National Grilled Cheese Day)! I have three nomnom grilled cheese recipes and they are all quite different so at least one of them should tantalize a taste bud or two! I am all for throwing ingredients on some bread in a frying pan and ending up with a gooey, yet crunchy, delicious masterpiece.
Margherita Grilled Cheese
You can't go wrong with this classic combo!

Bread
Tomato
Basil
Mozzarella Cheese

Ok this is amazing. Period.

Avocado
Spinach
Pesto
Mozarella Cheese
Goat Cheese

Pear Gorganzola Grilled Cheese
Interesting sweet twist!

Sliced Pear
Gorgonzola
Dijon Mustard
Honey
Candied Walnuts
(I added dried cranberries too)
Pile ingredients onto a slice of bread and grill that baby in an oiled hot frying pan! I paired them with some tomato basil soup and it made a great lunch for us this weekend! We both tried each recipe. My boyfriend's fav is the Margherita and mine is the Green Goddess. What's yours? :]

guest post: statement necklace diy

Hi Rouge & Whimsy readers! I'm Kim and I blog over at Oh, Sweet Joy! While Erika is off gallivanting in Europe, I'm happy to share one of my favorite tutorials with you!

Statement necklaces are my favorite accessory of the moment. I love how they can instantly transform a plain or solid top into something fabulous. Today, I'll show you how to make three necklace styles from the simplest of materials!

What you'll need:
an old t-shirt or 1/4 yard of jersey knit fabric
wooden beads (three sizes)
(optional) paint and/or spraypaint
scissors
needle with a thick "eye"

1. Cut your coral t-shirt or jersey knit fabric into two long strips, no more than an inch wide.
2. Spray-paint your wooden beads yellow.
3. Thread one "string" through the eye of the needle and string your beads on in the following order:
two small, two medium, three large, two medium, two small
Repeat on the other strip of fabric and once you have finished, tie a knot on each side of the beads.
4. Place the two pieces together how you want them to hang & tie the strips together just above the knots.
5. Place around your neck and tie with a bow!

1. Cut your bright aqua jersey knit into one long strip, no more than an inch wide. You can trim it down later if you'd like it to be thinner.
2. Leaving the beads natural for a bold contrast, thread your "string" through the eye of the needle and string your beads on in the following order:
two small, two medium, three large, two medium, two small
3. Tie a knot on either side of the beads so they don't move around.
4. Place around your neck and tie with a bow!

1. Cut your printed jersey knit into two long strips, no more than an inch wide.
2. Put a bit of dark brown paint into a bowl and water it down. Roll the beads around in it until they're covered and let them dry.
3. Thread one "string" through the eye of the needle and string your beads on in the following order:
one small, two medium, three large, two medium, one small
Repeat on the other strip of fabric with the following order:
two small, five medium, two small

and once you have finished, tie a knot on each side of the beads.
4. Place the "strand" with the larger beads on the bottom and give it more "slack."
5. Without tying the pieces together as we did in the first option, place around your neck and tie with a bow!

---

I already had the jersey knit//t-shirts, paint, and spray-paint  on hand, but this project cost about $12 for the beads and I still have beads left over to make more! Just make sure to take a coupon with you to Joann or Hobby Lobby for the beads.

Have fun & come find me here:

love.

friday finds & favorites: guest editor carina

This week I asked my friend Carina to curate friday frinds. I love saying "friend" because not only do I love Carina's cheerful, inspiring blog (and cute shop), we've actually hung out-- like more than twice. And she has great taste... as you can see below:

<><><>

Hello friends! Carina here from Lovely Little Whimsy.
When Erika asked me to share with you this week, I was more than happy to oblige...
I am currently obsessed with making my Christmas wish list. Technically I am way too old
to be doing such a thing, but my husband and I came to an understanding a few years ago after
he got me an electric toothbrush.
I have about a million things I'm currently loving on etsy, but lemme share a few of my faves.

Other things I'm loving:
>> my friend's gorgeous new baby - swoon.
>> also, these words. seriously needed this week.

Can't wait to hear what you all are loving this week. So happy to be here. Happy Friday!

<><><>
I told you she had great taste... I think I need to add her list to my list. (those teacups-- like I need more, but seriously!) Oh- you all should say hi to Carina on her blog, on twitter and of course, check out her shop lovely little whimsy.

I'd love to see what you guys love this week-- share below!

xo, erika

da rules: share some of your favorite things from the web and real life with the weekly friday finds & favorites link-up hosted by Beth and me. Please link up just your blog post with your faves (not your entire blog) and link back to Beth or me somewhere on the blog. Please, also, make sure that your post is relevant (i.e. no giveaways or that sort of thing.) And, of course, be sure to go visit everyone else who links up! :)

nesby's friend penny

If you're familiar with my blog, then you're likely familiar with my dog, Nesby, who I affectionately refer to as Monster simply for his occasional monster tendencies. Today, I'm excited for you to get to know someone who is likely Nesby's future doggy-wife....

<><><>

Hi guys! It's Julie, of Julie Ann Art, and I wanted to introduce you to someone today. Her name is Penny. And she's a love-able terror. Yes, terror. That was not a typo on terrier. Although, she is a terrier as well.

I think Penny would be best friends with Nesby if they lived closer, just as I would be best friends with Erika if we lived closer. Penny and Nesby would be two peas in a pod. You see, they love all the same things:

Eating scissors
Eating toilet paper
Eating fabric
Eating hairpins
Eating anything that is left on the floor
Eating anything that dogs are not supposed to eat

You see?
They have so much in common!

Now eating various amounts of all things is not the only things that would draw these two pups together. They both have an undeniable cuteness that makes their owners look past the "terror" traits, and focus more on their friendly, cuddling, unconditional loving qualities. Aren't dogs the best?

Want some more Penny updates? (Along with recipes, craft tutorials, and daily life posts!) Come visit my blog, Julie Ann Art!

Eating scissors? It looks like Nesby and Penny have quite a bit in common...

let's go camping!

I'm not camping-- that was two weekends ago, but I am out of town in Eastern Washington enjoying sunshine and lake time (and no Internet time). In the mean time, some of my favorites are here, blogging about whatever their little heart desires.
<><><>

Hi y'all! I'm so excited to join you on Erika's blog today! My name is Beth and I blog over at dot in the city. If you've been following Erika long, you know she loves to spend time outside and go camping. Since I too  love to camp, I thought it would be fun to share some ideas for how we go about planning a camping trip.

You don't often have to go far to camp. There are state parks and campsites all over. Do some online research to find out what's nearby. Use a weekend camping trip to see some sites you live near, but have never taken the time to explore for yourself. I live in Massachusetts (and have for nearly 10 years), but hadn't seen a cranberry bog until my husband and I went camping in a state forest a few weeks ago. We had to drive through dozens of cranberry bogs to get to the park.

If you go to a state park, there are likely trails on the same property or very close by. If not, it may take some research/planning ahead of time to figure out where to go for a hike. And this may sound crazy but trust me, leave your phone in the car or turn it off altogether. If you're going somewhere that's not too far from "real life," you may need to cut off your ties with reality (just for the camping trip). A break from technology will do you good ;-) Seriously, just enjoy being outside!

There's no need to sacrifice quality or flavor when you're away from your kitchen. With some planning and prep before you leave your home, you can have a delicious dinner. Foil is my best friend when it comes to car camping. There are so many meals that can be cooked in foil. I came across a list from The Food Network of 50 things to grill in foil from desserts to side dishes to meat. We cutup the veggies ahead of time, put them in foil packages, and then pop them on the grill once dinnertime rolls around. No need to pack a cutting board or sharp knife. I'm all about keeping meals simple, so you can spend your energy enjoying the place and people you're camping with.

Get to know your camping neighbors. I've learned it's very easy to do so when you bring your dog. People are often intrigued and ask questions about our dog or want to pet him, so I end up meeting the nearby campers. I only mention this as a suggestion because I'm a bit of an introvert so meeting strangers at a campground isn't my default mode. It seriously paid off recently when we forgot to bring coffee and a camping neighbor offered us each a cup o' joe after we had chatted for a bit (what a lifesaver)!

Bring your favorite (card) games. Without TV, computers, and phones, once the sun goes down there isn't much to do. I'm pretty sure card games are a camper's best friend. Get comfy in your tent or by the campfire (where ever you're most comfortable) and play a game you enjoy. We usually bring Phase 10, Uno and a regular deck of cards.

What are your must-haves for camping trips? Connect with me on Twitter, Instagram or Facebook. Thanks again to Erika for having me!

<><><>

I love camping and I love Beth's ideas here! We just one more month of summer (gasp!) and I think I'll definitely have to get camping again and maybe try some of those fancy-looking foil dinners. :)

Erin makes me laugh (she explains how)

I know-- I'm still out of town, perhaps sipping on some iced beverage right now, but I wanted to give you all still something great to read... enjoy this post from a gem of a girl, Erin.

<><><>

Hey there kids.
My name is Erin and I blog over at Living In Yellow.

A blog that really has no point…which is why I am still trying to figure out what entices people to come back on a daily basis.

Anyhow—Miss Erika (aka my favorite fashionista, beer-drinking, brownie-eating, color-block tote making, Seattle-ian) asked if I would write a post for all of you lovely readers.

I know I know—guest posts suck.
But today, I am going to try my hardest to slash that whole “ewwww another guest post..catch ya later” mentality in the throat.
And what better way to do that than with humor?

Now I don’t know about you, but I love myself a good dose of humor.
My life motto is if I can laugh enough, I don’t have to actually do any physical exercise.
Wanna burn off the three donuts you just ate for breakfast? Watch The Ellen Show.
Way more beneficial than stepping foot into a gym.

So some of you may be thinking “well crap. I am not very funny…Nor do I know how to be funny on my blog.”
To which I would reply “Sucks to be you”.
Just kidding.
Kind of.

In an effort to put those thoughts to rest though, I thought I would share a couple of ways on

“How to be a funny blogger”

Let’s begin shall we?

1.  Make fun of yourself. Pretty regularly. Let’s face it—we all have flaws {unless you are Luke Bryan, Channing Tatum, and Jennifer Aniston} and there is no reason we need to hide those suckers. I look at it this way—if I don’t make fun of them, somebody else probably will. Call yourself out on the fact that you wear socks with holes, that you pee your pants in the grocery store, or that you fall down stairs when wearing heels. Moral of the story: save yourself having to punch somebody in the face for making fun of you by making fun of yourself first. Your knuckles will thank you.

2.  Write as if you are speaking face to face with somebody. My favorite blogs are the ones where I feel like I am actually conversing with them. The blogs that use slang and aren’t afraid to type like they talk. Now I don’t know about you, but I am not one to sit and have a conversation that goes a little somethin’ like “Last evening my adorable husband and I sat outside and watched in awe as the fireflies lit up the sky”. No. I would never say that. However, I would say “so the other night my husband and I watched fireflies light up the sky like a mother and it was pretty darn amazeballs”
Yup. Much more my speed.

3.  Say what is on your mind at all times. So what if you are writing a post about how much you love your cat and smack dab in the middle of writing you get a craving for mac & cheese with hot sauce on top? Throw that in there. People want to know that you aren’t only obsessed with your cat but that also love mac and cheese {like any normal human being should}. Random is good people. Remember that.

4.  Refer to items as things with feelings. This is just something I’ve always done (then again I am not the most “normal” you may say..). Let’s use your blog as an example. See how boring it was just referring to your blog as “a blog”. I like to think of mine as a girl (because she is cute. Obviously if something is cute it’s a girl). And I believe my blog likes to indulge in a drink every now and again. Let’s compare the two sentences and see which is more enjoyable to read “I am going out tonight to celebrate that my blog just turned a year old” or “My cute little blog requested that I take her out for a celebratory drink tonight for her first birthday. She may be young but she sure knows how to throw down every now and again…” You tell me which was more enjoyable.

5.  Don’t be afraid to show sarcasm. It’s the best thing since Michael Jordan left his wife for me.

6.   Use some “shock and awe” in your titles and/or posts. I don’t like boring blog titles and I don’t think blog readers do either. Instead of titling a post “We Built A Firepit” why not call it “Getting Dirty with My Husband”. Take a guess at which one will bring you more page views. Lesson to be learned: People are perverts. Use it to your advantage.

….and there you have it kitten britches {lesson number 7—refer to your readers as kitten britches}, six to seven simple things to remember to make your blog posts hill rat hilarious.

Now do me a favor and stop by over here would ya?
I’d love to see your smiling faces. Or at least hear from your funny fingers.
Whatevs.

say hi to abbey

Blouse, pants, belt: LOFT. Hat: Target. Shades: Anthropologie.

Hello, Rouge & Whimsy friends! I am Abbey from Along Abbey Road, a personal style and lifestyle blog mixed with bits of ridiculousness. So happy to be here today! Erika is just the cutest and that hair. Oh how I envy that gorgeous hair!

A little about me...

I've been married for 3 years to my awesome husband, Matt. We have a studly 4 month old, Luke. We are obsessed with Disneyland. I eat Oreos like nobody's business. Matt does exceptional made up Broadway performances. Luke's full-time job is giggling and squawking. One might say it's quite the circus over here.

Be sure to stop by Along Abbey Road for more silly anecdotes and fun moments!

Okay Abbey *blush* thanks for the compliment but girl, you  have great hair!

To see more of Abbey and to see what I wore on her blog.. (it's funny, we both chose leopard)... head on over here.

friday finds & favorites: spring showers and flowers

For this week's Friday Finds & Favorites I'm having one of my sponsors Candace share her favorite things for spring!

<><><>

Hi everyone! I'm so excited for the opportunity to spend some time with you all today! My name is Candace and I write Woodgrain & Gold. I am a design student living in Portland OR, but am a native Seattleite like our lovely miss Erika. Blogging happened to me a couple months ago and I have completely fallen for it. In my blog I give a little insight on what it's like living in Portlandia, different aspects of design, and a fair share of fun DIYs. I hope to see you over there!

Spring for the most part entails a good amount of showers and breezy sunny days, especially over here in the good old Pacific Northwest, so I thought it was only fair to recognize them as two different lists.

found here: 1 // 2 // 3 // 4 // 5 // 6 // 7

I feel it's necessary that every girl have a black and white striped shirt. It's a great staple and paired with a bright hi-lo skirt and a floral scarf, you have one amazing outfit. There is a Doc Martens store across the street from my school and I am completely head over heels. You can never go wrong with a well made handbag and pair of oxfords. Tangerine is the hot color right now (right pantone?) and makes a fun pop of color for your nails. Top it all off with a lovely bright blue pair of sunglasses and you are ready for the sunny days.

 found here: 1 // 2 // 3 // 4 // 5 // 6 // 7

A light wash denim top and floral pants? In love. I am a public transportation girl so a good backpack and cute umbrella are a must for the rainier days. I highly recommend the Native "Jimmy" boots, they are lightweight and perfect for rain. Pair them with a tall sock, like those amazing mustard yellow ones, and you are golden. When spring comes along I switch over to a lot more citrus and fruity smells. I just switched over from Rosebud's Minted Rose to Strawberry and it feels very appropriate.

There you have it, my must-haves for spring, hope you like them as much as I do. Big thanks Erika for having me! Hope you all have a great rest of your weeks! Happy Spring!

<><><>

Candace-- no good. You've totally tempted me to go shopping because although the rainy day outfit is more practical-- I want that yellow skirt!

Friends-- to see more of Candace's lovely style picks I highly recommend her blog.

happy weekend!

chatting with alissa of rags to stitches

I am pleased as punch-- tropical punch in fact-- to share with you one of my sponsors and dear blog friends alissa. I love her style, her heart and her bubbly personality. I also have had the joy of meeting her in person and she is as gracious and funny as she appears online.

<><><>

 Who are you?
I am:
a wife of one, a mom of two.
someone who can’t start my day without coffee and make it through the day without chocolate
is growing my hair for the first time ever. It’s the longest it’s ever been.
a Mom who loves to snuggle and kiss my children.
A mom who realizes that I need a break from being a mommy sometimes to reconnect with myself and my hubby.
I have a blog and a shop ,and when I'm not blogging or shopping you'll find me soaking up every ounce of time I have with my family. I hope you'll pop by sometime and say hello.

How did your blog and shop get started?
I started blogging when I found out I was pregnant with my daughter. I wanted to document our journey so I could someday share it with her. From there the blog grew, as our family grew to a blog about our life, love, journey and faith. My shop started a couple years later. I had taught myself how to sew when I was pregnant and what began as sewing gifts grew into a small business called Rags to Stitches Boutique. Currently you'll find me making Snuggies to keep your favorite electronics warm and snuggly.

You are obviously an accomplished sewer-- how long have you been sewing and what's the hardest thing you've ever sewn?
I would call myself an accomplished sewer per say. hehe But I think the hardest thing I've ever sewn was a dress for myself. I'd share the picture with you but well.... it doesn't fit anymore. hahaha

What does the "average" day look like for you? (And I know that there are probably no average days for you or anyone!)
Well, you're right, I'd love an "average" day. On a typical day you'll find me snoozing till the last possible moment to savor every extra minute of sleep I can before the morning rush begins. We get up, eat, get ready and we're usually out the door to Disneyland, play dates, preschool, gymnastics, dance or swim lessons. phew and that's all before lunch most days. Then it's home for lunch and nap time. I'm a huge fan of nap time, it's when I get my emails returned, blog posts written and sewing done. Then after naps, we snack, play, make dinner, and get ready for bed. Once bed time rolls around the hubs and I play catch up from our day, work on our computers a little and head to bed. Boy, writing that down sure makes me sound boring huh? haha (nope! not at all!)

If any celebrity could own one of your products-- who would it be, and why?
Ummm I would say Ellen DeGeneres. I love, love, love her and I would pretty much buy any product she endorsed so I'd love it if she'd endorse mine. :)

So I'm considering a swap to Store Envy-- as a Stove Envy shop owner-- sell me on their awesomeness in two sentences. :)
Hmmm, I would tell you that Storenvy is a great online storefront for people who really want to start a handmade business or have a handmade business and are tired of paying all those extra listing and transaction fees. Also, they have amazing customer service, which in my book, is a total plus!!

What is your favorite way to relax?
I love being pampered. So my idea relaxation day would be a mani/pedi, followed by a massage. Oh and can I have a Starbucks with that? ;)

<><><>

Alissa, I would have a Starbucks with you any day-- or any old cup of drip. In fact, speaking of that, Alissa has a Friday post called Coffee Date where she shares about her week-- serious and lighthearted things-- over a virtual cup of coffee. I told her she should make it a linkup... and I'd join in.  Anyone else who wants to follow suit, the more the merrier!

Thanks, Alissa, for sharing! I'm so glad you were over at my little space today.

Connect with Alissa here:
